Sushi is made with both raw and cooked ingredients, including the fish, but at Ichiban, everything is raw. My dinner companion informed me that he would have to slink out in shame and humiliation if I asked to have my sushi grilled, so I wound up ordering teriyaki chicken instead.

We were seated on the sushi bar side of the restaurant. This apparently was the wrong thing to do, and lead to my not being served until my companion was well into his second tray of sushi, nearly forty minutes after we had placed our orders. No, that is not an exaggeration. I was watching the clock because I had arrived very hungry.

The salad and soup appetizer was good, but definitely not enough to tide me through that long wait. Lack of care did not keep the wait staff from serving me in a timely manner. They had been schooled that it would be rude to tell a customer what to do, especially if there was any chance the customer might be embarrassed by correction. They assumed that I would move to the correct side of the restaurant when I was ready for my meal, and acted accordingly.
